In a 3
quart saucepan, combine sugar, cornstarch and salt; gradually add
milk. Cook over medium heat, stirring constantly, until
thickened -about 2 minutes. Remove from heat and stir in the
melted chocolate. Blend a small amount of the hot mixture into
beaten eggs; return all to pan. Cook 1 minute on medium heat;
do not boil. Remove from heat and cool. Add cream; chill
thoroughly. Churn freeze until the mixture thickens; fold in
marshmallow crème at last moment before freezing.
Yield:
3 quarts.
