Chocolate Marshmallow Ice Cream

 

A summer favorite, this homemade ice cream is a dream come true for chocolate lovers and sweet tooth junkies alike.  Just find a comfortable chair or a quiet spot to relax, put your feet up and indulge yourself with this smooth chocolaty treat.    

 

Ingredients:

2  cups sugar

4 1/2 teaspoons cornstarch

1/4  teaspoon salt

4  cups milk

4  ounces unsweetened chocolate, melted

4  large eggs, beaten

4  cups light cream

1  cup marshmallow creme

pecan or walnut dessert topping

 

Preparation:

In a 3 quart saucepan, combine sugar, cornstarch and salt; gradually add milk.  Cook over medium heat, stirring constantly, until thickened (about 2 minutes).  Remove from heat and stir in the melted chocolate.  Blend a small amount of the hot mixture into beaten eggs; return all to pan.  Cook 1 minute on medium heat; do not boil.  Remove from heat and cool.  Add cream; chill thoroughly.  Churn freeze until the mixture thickens; fold in marshmallow creme at last moment before freezing. 

Serving Suggestion:

Scoop ice cream into tall dessert glasses.  Pour a spoonful of pecan or walnut dessert topping over ice cream and serve.

 

Yield:  3 quarts of ice cream.
