Chunk Full of Nuts Peanut Brittle

 

Every Christmas, my grandmother created this delicious treat to add to the stockings for all of the children…and adults alike.  It’s a traditional sweet treat that will disappear like magic. 

 

Ingredients:

 

1  tablespoon butter

7-1/4  ounces canned salted peanuts

1/4  teaspoon salt (optional)

2-1/3  cups sugar

Preparation:

 

Melt butter in a small saucepan over a very low heat.  Add peanuts and salt; allow to warm.  Place sugar in a large thick skillet over medium heat.  Stir continuously until sugar is caramelized into a golden brown syrup.  Quickly stir peanuts and salt mixture into syrup.  Pour onto a large buttered surface at once.  With a big spoon, stretch and pull candy into thin sheet.  Cool and break into pieces.

 

Yield:  1-1/2 pounds brittle.
